My top two favourite recpies

I have a genuine interest in food and cooking, this sparked after moving to university and having to cook for myself. I managed to find new recipes and ways to make food that not only tasted good but was enjoyable and affordable.

It is always fun to follow a recipe make something you enjoy or find something new. Cooking can be quite calming.

Here below is my go to meals to make at the moment.

Creamy chicken, mushroom and rice:

Ingredients:

Chicken thighs, mushrooms, basmati rice, onions, garlic, chicken stock, double cream.

How I make it:

Start by chopping your onions and crying them along with the garlic in a frying pan or wok.

Cut the chicken into strips and add to the pan. Once nearly cooked add the chopped mushrooms and let it all cook.

Once the mushrooms have shrunk , boil the kettle and start the rice on a 15 minute timer on the stove.

Add the chicken stock to the pan along with the double cream.

Let simmer until the rice is done.

Serve and enjoy.

Sausage, tomato pasta

Ingredients:

Sausages, pasta, tomato purée, chopped tomatoes, mushrooms, peppers, onion. Optional add double cream for a creamy tomato dish.

How I make it:

Start by chopping your onions and crying them along with the garlic in a frying pan or wok.

Cut the sausages up into pieces and add to the pan. Once nearly cooked add the chopped mushrooms and let it all cook. Along with the chopped peppers.

Boil the kettle and start to cook your pasta in a separate pot.

Once cooked add the tomato purée, chopped tomatoes and stir.

Add the double cream and stir till mixed together and let it simmer for 10 mins.

Once the pasta is cooked add it to the main pan and mix it all together.

Dish up and enjoy.
